This recipe is a prime example of healthy food’s ability to still taste indulgent and not boring! These cookie-style oaty bites are guilt-free, gooey and full of goodness (they are also irresistible – I ate four as soon as they came out of the oven). They also take no time at all to prepare.
I’ve recently discovered the power of chia seeds; they are high in fibre, omega 3 fatty acids, protein, calcium and more. You can also chuck them into anything – sauces, smoothies, porridge, baked goods…
Use the ingredients in brackets to make them vegan and dairy-free.
This recipe makes 8 cookies/oaty bites.
1.5 tablespoons chia seeds
1/4 cup skimmed milk (or almond milk)
1 banana – mashed
3/4 cup oats
1 tablespoon butter (or almond butter)
1 teaspoon cinnamon
100g dark chocolate – chopped (or vegan chocolate)
Thumbnail size piece of fresh ginger – grated
